Easy Individual Quiches with Puff Pastry

Yield: 4 small quiches

Time: 50 minutes

Level: Beginner

Sauté onion in olive oil on the stovetop for 5 minutes.

Whisk eggs in a jug.

Pour in cream and season with salt and pepper, whisk well.

Trace around the mini pie pans to create puff pastry crusts.

Gently press each pastry crust into each pie pan.

Distribute the cooked onion and sliced cherry tomatoes amongst each quiche crust.

Pour egg and cream filling into each quiche, leaving a small gap just below the top.

Bake for 25-30 minutes in a preheated oven at 400ºF (200ºC).

Enjoy as for dinner alongside a salad or roasted potatoes.
